Kale and Kelp salad


This recipe came out of a lack of ideas for lunch one day. I was not feeling any of my regular dishes, I needed something new.  I looked at my fridge and started pulling out ingredients and creating. This is quickly becoming a family favourite!IMG_20160713_130334

Salad Indredients:
One package kelp noodles
One bushel of Kale (shredded)
1/3C shredded red Cabbage
2 large Carrots shredded
1 red pepper chopped
1/4C chopped green onion (scallion)
1/4C finely chopped fresh parsley (optional) *if you you are missing one of these ingredients or do not like one of them sub in something you love instead.  Rawfood is fun and easy to play with!

Remove the kelp noodles from the bag and rinse with warm clean water.  Place rinsed kelp noodles into a bowl with the rest of the ingredients and toss.

The juice of one large lemon
1/3 cup cashews
2 cloves garlic
1/4 tsp sea salt
1/3c raw olive oil
1/4c water (add more if desired)

In a high speed blender (like the vitamix) blend till smooth. Pour onto salad and mix throughly.  Top with hemp hearts and pumpkin seeds.
