Raw vegan chia pumpkin pudding ✨ this is delicious!
I made this with my Mom last Fall and we loved it!
You will need
2 cups chopped raw sweet pumpkin
1 young coconut (flesh and water)
1/4 cup chia seeds
1/4cup maple syrup or raw agave
1/4tsp ground vanilla
1/2tsp pumpkin spice
Combine all ingredients in a high speed blender. Let sit for a minimum 1/2 hr to thicken before serving. Make it Purdy with fun toppings💚
