Dill-icious veggie dip!

Raw, vegan, GF, paleo
I absolutely love this recipe. I made it one day because I had a surplus of dill and was so excited to see the family’s reaction. The whole family gobbled down so many veggies with this dip!  This is now a staple in our house.

Ingredients
1 cup raw Cashews
2/3 cup water
1/3 cup fresh lemon juice (or add more for the real lemon lovers)dip3
2 handfuls fresh dill
1 handful fresh chives or green onion
1/2tsp dried Basil
1/2tsp dried oregano
1/2tsp sea salt or Mountain salt (I use Giddy yoyo’s)
1 large clove of garlic
Put dried herbs, cashews, lemon juice, water, garlic, salt and 3/4 of the fresh dill into a high speed blender and blend until smooth.  Finely chop the rest of the dill and the chives.  Add them to the blender and “pulse” a couple times to mix (do not over pulse) Serve with Veggies for dipping or spread onto raw crackers. dip2
Store in the fridge
