Raw Pad Thai!!

Eating Raw does not mean you have to give up some of your favorite dishes! Here is my Raw Pad Thai recipe 🙂

Kelp and Zucchini noodles with sweet Thai sauce
*Peanut-free, gluten-free, raw, vegan*

Place approximately 2cups of kelp noodles in a bowl of very warm water. Let sit while preparing the rest of the meal.

Prepare two small zucchinis in a Spiral Slicer (I got mine from Upaya)sparalizer

-1/2 cup raw tahini
-1/2 cup raw almond butter

-1/2 cup water (give or take for your preferred consistency)
– 2tbs maple syrup (agave will work too)
-2tbs fresh lemon
1tsp fresh chopped garlic
1tsp ginger root grated
Pinch of sea salt

-1/2C water (or more if desired)
Mix all ingredients in a food processor

Drain kelp and mix with zucchini noodles
Optional- mix 1/2cup thinly sliced carrots into noodles

Mix sauce and noodles, sprinkle your favorite seeds over top, I love hemp hearts on mine! ;P
